Caribbean Chicken

The SandBar is really more of a seafood place, but Andy has found this dish on the back end of quite a few vacations, and can vouch for its tastiness. First off, it’s got two chicken breasts, so it makes for a full meal. The mango salsa is absolutely delicious and complements the chicken perfectly. The sweet and sour sauce and jasmine rice really deliver on the Caribbean taste, while the plantains are a nice way to finish off this seafood-alternative meal.
